Season changeover for Autumn

As Autumn is upon us, we are thinking of a changeover within our homes to settle down for the chilly days ahead.
Layered textiles, rich floral prints and warming wool textures bring a sense of seasonal comfort to the home.

As the temperature drops and we shelter at home from the wintery weather days, there is much importance to how we dress, layer and wrap up. To stride out into the world or spend time in our homes.

As we hunker down for Autumn, it’s the season for soup.

A delicious recipe for butternut squash soup.
1 onion, 1 carrot and 1 celery
1 Butternut Squash (chopped into chunks)
1 garlic clove
1.5 litres vegetable stock
Optional - 150ml Single Cream
Olive Oil
Salt and Pepper
Garnish with your favourite herbs and toasted seeds
Fry your chopped onion, carrot and celery until softened,.
Once softened, add in the garlic and fry for a few minutes.
While this is frying, on a baking tray roast your butternut squash in olive oil, salt and pepper in the oven at 180 degrees until the chunks have softened.
Put the onion, carrot, celery and butternut squash into a blender with the vegetable stock - add this in gradually so the soup doesn’t get too watery. At this point, add in the optional cream and some more salt and pepper.
Serve with a herb garnish or toasted pumpkin seeds or perhaps a spoonful of basil pesto.
And a generous serving of sourdough bread and butter.
